Monday Mood: Tea Talk

Today I would like to fake my best British accent to say, “Happy Monday! Would you care for a spot of tea?” Whether it is hot or iced, tea is a soothing and healthy way to quench your thirst. Here in Arizona I am all about iced Blackberry Jasmine Green Tea during the day. At night, it’s a tradition to wind down with hot tea in my monogrammed mug.

I would love to have some friends over and serve iced tea in Mason Jars with swirled straws and fresh fruit like #6. Currently I am on the search for a tea kettle and I love the quirkiness of the little elephant! If you’re hosting a brunch, the milk carton shaped creamer would be great for serving coffee or tea.

Couscous and Edamame Salad

There are some words that are just plain cool. You know, the ones that roll off your tongue and are fun to write in cursive. Ironically two pretty cool words found their way into this Couscous and Edamame Salad.

Couscous has been a part of mediterranean cooking for centuries. The tiny little grains make a light, but hearty addition to a meal. Edamame is in the soybean family and is a good source of protein and fiber, according to WHFoods. Together in this salad, they make a great combination of texture and flavor.

I love the chewy, salty, crunchy and chilled elements of ingredients in this salad. It would be great to take on a picnic or enjoy as a light lunch. If you’re looking to fill up even more you could add some chicken or tuna! I added beets for more color and flavor, but the salad tastes great either way.

Couscous and Edamame Salad

Couscous and Edamame Summer Salad


  • 1 box of cooked couscous (according to package directions)
  • 1 1/2 cups cooked edamame
  • 1 cup canned corn
  • 1 15 oz. can garbanzo beans
  • 2 green onions, chopped fine
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted pine nuts*
  • For Vinaigrette:
  • 1/4 cup white wine vinegar
  • 2 tablespoons honey
  • Juice of 1 lemon
  • 1 tablespoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup olive oil


For the salad: Cook couscous according to package directions. Fluff and let cool. In a separate bowl add cooled couscous, edamame, corn, garbanzo beans, green onions, cranberries, feta and pine nuts.

For the vinaigrette: In a small bowl, combine the vinegar, honey, lemon, salt, and pepper. Whisk in the olive oil until smooth. Pour the vinaigrette over the couscous and toss to coat evenly.

*To toast the pine nuts, heat small skillet to medium heat. Add pine nuts and shimmy in pan   until light golden brown. This happens quickly so don’t go anywhere!

Monday Mood: Picnic Perfect

Graduation Party Ideas

Graduation season means two things: festive parties and tasty sweets. My cousin Emily just graduated from high school in North Dakota. She and my Aunt Buffy were Pinteresting (planning) for months coming up with lots of fun ideas. I had a blast helping them craft, bake and decorate for the celebrations!

My Aunt Buffy baked 400 mini cupcakes in Chocolate, Vanilla and Red Velvet. The mini cupcakes are fun for parties so people can sample one of each.

The homemade Peanut Butter, Buttercream and Cream Cheese Frostings were so divine!

Icing cupcakes is so therapeutic for me…I love making the uniform swirls! Adding a pinch of multicolored sprinkles is a magical touch.

These little toothpick flags printed on scrapbook paper added personalization to the cupcakes, not to mention lots of pizazz.

Emily and Gabriela

Here’s my cousin Emily, the graduate, and I! We are all about bright colors this summer…and just happened to match the party’s theme.

This was the “party wall!” We made tissue paper flowers to hang from the ceiling. Buffy made flag banners out of scrapbook paper and printed letters. Tied together with some ribbon and ta-dah! The dessert plates are made out of drink glasses or vases, glued to plates, and spray painted. Inexpensive and adorable!

The table center pieces were my favorite part of the decor. Spray painted wine bottles accented with multicolored ribbon were filled with mini tissue paper flowers. I made these little flags with scrapbook paper and wooden dowels. Adding a quote of advice from Emily’s family members made for great conversation and even a bit of inspiration!

My Trip to Oregon

Last weekend I went to Eugene to visit my boyfriend Alexander at the University of Oregon. Mother Nature was good to us (or maybe I just snuck the sunshine in my suitcase!) because it was sunny and gloriously warm all weekend.

Alexander and I had a blast playing frisbee under the sun, biking and exploring trails by the Willamette River. Saturday morning we ventured to the open-air market for some produce and people watching. We picked up batch of gorgeous radishes and cut them up for a salad. What’s your favorite thing to do with radishes?

We also made trips to Prince Puckler’s for ice cream, the Milky Way for bagel sandwiches, and Agate Alley Bistro for dinner. The Fig Prosciutto pizza with brandied figs, salty prosciutto, creamy gorgonzola and peppery arugula was divine. I am going to try making it at home and will share the recipe! I also enjoyed the Ahi Niçoise salad with champagne white truffle vinaigrette.

VooDoo Doughnut in Oregon is famous for their crazy concoctions and mind-blowing flavors. Alexander and I got their Bacon Maple Bar and Voodoo Doll filled with raspberry jelly! I am going to try replicate the salty and sweet combo with these Maple Bacon Cake Doughnuts.

I had such a lovely time with Alexander and can’t wait to cook with him this summer. A sprinkle of love always makes a dish taste better! If you have been to Oregon will you share some of your favorite places to dine? We love trying new places!
